Mother’s Day – Pain Perdu

Firstly I would like to wish all the mom’s out there a wonderful day of peace and relaxation doing whatever it is that makes you happy. I personally hope to get in 9 holes of golf this afternoon. This is my first mother’s day with nothing really planned.  My normal mother’s day consists of me making my mother and mother-in-law either brunch or dinner and sometimes both. Neither is in the state this year so I get the day off, for that matter my own kids are both out of state well actually they are both out of the country.  My son went to visit his sister in Japan; he does arrive home late tonight so off to Boston we will go, my husband and I will go out to dinner somewhere en-route.

Looking for something a little special for breakfast? Pain Perdu can be as easy or as sexy as you want to make it.  Just the name sounds sexy; you got to just love romantic languages they can make an ordinary meal sound phenomenal.  Case in point Pain Perdu translates to “lost bread” or as we know it French toast nuff said.

My inspiration for how I made this dish was from my favorite local restaurant, they serve something similar for one of their desserts and it is amazing.  It also helps that there were a couple of bananas’ on the counter that needed another purpose and we had some leftover French bread from the previous night’s dinner.  This shows exactly how frugal I can be.  Quick story – my girlfriend was over one night and mentioned something about caramelized bananas so I whipped it up for her YUM!

Sorry a little longer than a quick story – The best French toast I ever had and forever changed the way we make it from that day forward.  For my 25th birthday my husband surprised me with a weeklong trip to the US Virgin Island of St Thomas.  We went into Charlotte Amalie for breakfast at the Greenhouse Café and I ordered French toast.  It looked pretty, but the taste was just amazing.  It was sliced elongated; it was buttery cooked to perfection and sprinkled with confectioners’ sugar.  I asked the waitress if the chef would share how it was made.  Even back then I was a foodie and didn’t know it.  His secret was the wash; it was only egg and rum.  Who knew!

Caramelized Bananas

2 tablespoons butter

2 tablespoons brown sugar

2 bananas

In a small sauté pan melt butter medium low heat, add sugar and sliced bananas. Cook until sugar has caramelized; watch carefully it could turn from yummy to yucky pretty quickly.

Pain Perdu (aka lost bread)

3 Eggs

Splash of rum

Splash of Milk (yes I can’t not put some in)

Few sprinkles of cinnamon

Splash of Vanilla

Loaf of leftover French bread

Sprinkle of confectioners sugar

Slice bread, in a shallow dish add eggs, rum and cinnamon beat till combined.  Add sliced bread to egg mixture soak a minute or two, flip to soak other side.  Pre-heat griddle add soaked bread once up to temperature.  Cook till brown on both sides.  While toast is cooking; make the caramelized bananas.

Taco Tuesday (Fish Tacos)

I believe I mentioned my family tried meatless Monday for a spell.  I think we lasted 3 or 4 months before we ran into some difficulty in staying true.  Lunches were definitely my Achilles heel. Having enough time to plan ahead for my busy schedule especially during the summer months; I was just not organized enough nor creative enough being such a meat and potato kind of girl. Who knows we may try it again at a later date.  It was comical to me how many of my co-workers and close friends thought we were nuts.  My girlfriends 8 year old had one of my favorite comments.  “What are they going to do next Taco Tuesday” I love it!!! And also thought what an awesome idea!

No; we did not start taco Tuesday but we have come across a fish taco recipe that we are definitely adding it to our meal rotation.  We seem to make them when we have friends and family over.  My father-in-law said they were the first tacos he has ever liked. Now that is saying something being that he is in his 80’s.  Everyone has really liked them so I wanted to share them with you.

Make the salsa, cover and put in the fridge until you need to use it.

Make the mayo and if you have an empty squeeze bottle; I find it works really well, plus you can store in the fridge for another use.  I bet you end up making these again within a month; maybe even the following week, I know we did.

2 Pounds boneless, skinless Mahi Mahi (flash frozen fish worked out excellent) Thaw it completely

2 Cups AP flour

3 Eggs, lightly beaten

4 tablespoons water

2 Cups Breadcrumbs (I used my own but panko would be awesome)

Kosher Salt and freshly cracked black pepper

Vegetable oil for frying

½ head savoy cabbage, finely shredded

1 bunch of cilantro

1 bunch chives, chopped

3 limes; cut into wedges for garnish 

Cut fish into 1 ounce strips, set up breading station of flour, eggs with water and breadcrumbs.  Salt and pepper each container.  I use my glass Pyrex pie plates that I have had for years!

Dredge the pieces of fish in flour, eggs, than breadcrumbs.  Once all completed fry fish in small batches in 375’F oil. Drain on paper towels. Keep warm until ready to serve.

 Chipotle Mayo:

1 cup sour cream

1 cup mayo

3 chipotles in adobo, plus 2 tablespoon of adobo sauce

½ lemon, juiced

in a blender put the chipotles and puree until smooth, add sour cream, mayo, adobo sauce and lemon juice and combine to process until the mixture is consistent and creamy.  Season with salt and pepper and refrigerate until ready to use.

Mango Radish Salsa: 

2 Limes

2 ripe mangoes, diced

4-5 red radishes, diced

1 small red onion, diced

1 tablespoon chili powder

½ bunch fresh cilantro, leaves chopped

¼ cup extra virgin olive oil

Kosher salt, freshly cracked black pepper

Add all into a dish stir and refrigerate until ready to use.

 

Serve Family Style: toast corn tortilla’s on a griddle or over an open flame on your stove top.  I used my griddle it works great.

Ham & Asparagus Soup

Who doesn’t need to use up some of the leftover ham from Easter?  I swear the weather this weekend also helped dictate what I ended up making.  It has been rainy, raw and just plain chilly, kind of like a fall day.  It also helps that one of my favorite soups is creamy ham and asparagus.  It is so satisfying, it is simple to make and warms you from the inside out.   I also make this when I have leftover asparagus; I guess pretty much any excuse works for me.

I do know many people who are not soup people, I don’t get that at all, and I kind of feel bad for them? Maybe they have never had a good tasting soup?  Maybe when they were little soup was their meatloaf & peas (two of my childhood nightmares) I do like peas now but I still refuse to eat meatloaf.  I love meatballs but no loaf.  It’s a mental thing I know. That must be it!  On the other spectrum  I have had a few people come up to me at work while I was re-heating my yummy soup for lunch and really want to make homemade soups but have had terrible luck so have given up; which is really sad.  I have had a soup class and hope to again – I will help and or convert as many as will let me.

Passing it on – My son was looking around the kitchen to see if we had any canned soups.  I convinced him that he could make a delicious tomato soup, fairly easily and would taste a million times better than anything he could get from a can.  I got out all the ingredients and while sitting at the island working; I guided him through the process.  He wanted to make the soup all on his own, that’s my boy!

If you have some things to use up in the fridge and a little time I believe soup is a great way to feed yourself and your family.

Creamy Ham & Asparagus

1 ½ Cup fresh asparagus

2-3 carrot, julienned

2-3 tablespoons butter

2-3 small white or 1 large onion, diced

2-3 cloves of garlic, minced

2-3 tablespoons butter (equal to your butter)

2 cups milk

2 cups chicken broth

1 cup fully cooked ham, cut into bite size pieces

Salt and Pepper to taste

Grated Parmesan cheese, optional

Trim asparagus and place in a saucepan, cover with water and cook till just crisp-tender.  Drain and set aside

In a heavy saucepan, sauté carrots in butter for 3-5 minutes; add onions and garlic and sauté a couple of minutes longer or until tender.

Stir in flour; gradually add milk. Bring to a boil; boil and stir for 2 minutes, add broth, ham and reserved asparagus.

Reduce heat and simmer. Add salt and pepper to taste. Garnish with freshly grated parmesan cheese.

Slight variation – You can also add a couple of potatoes if you wanted a little heartier soup, you could also add your favorite herb to change it up a bit.  If you add raw potato, cut them up small and simmer long enough to cook them probably 20-30 minutes.  Increase the chicken stock for a lighter soup or a little more milk.  if you wanted a really creamy soup, substitue 1 cup of half and half for 1 of the cups of milk – BUT do not boil the soup once you add the half and half. You can let it simmer to heat through but do not let it boil.

Sorry this is a day late, we have been without internet for 4 days UGH!

 

Today like the last 30 years has started off with a pancake & sausage breakfast to support our local Rotary Club.  Let’s just say I would rather just donate money than actually attend and that is all I will say about it. My in-laws have been going to this event since they moved here in the late 70’s and we, I mean they just cannot break from tradition. I do say this lovingly.

I only added a few nuts and I was too distracted and ended up cooking it a little longer than I should have.  It was still very moist and yummy!

Later today I will be having family over for Linner, late lunch early dinner as I have called it for many years.  It is I think the first year that I didn’t hide eggs for the kids.  Which is kind of funny since they really are not “kids” anymore 21 & 23; but they always insisted that eggs be hidden.  When they were little I used to do a treasure hunt all over the house and yard for them depending on the weather.  I have a feeling if my daughter was home; she would insist on me hiding some for her and her brother to find.

Another tradition we started many years ago was we played four square in the driveway on a huge course with one of those huge plastic balls you see in those bins at the grocery stores.  We have had some crazy games over the years, not only on Easter, but I think that is when it started. We have had marathon games lasting 6-8 hours with everyone playing at some point from as young as 4-5 to as old as 70-80.  It would get pretty crazy at times but always full of laughter.  I do definitely miss playing with my brother, may he rest in peace.  Our main goal was to get him out of the servers’ box not sure how but he had a knack of always being in it.

Yesterday while out getting stuff for dinner I picked up a bag of used golf balls so that we could smackem’ down the driveway; the 3 of us sent all 48 through the woods and down the 1000’ driveway.  We do this periodically, afterwards we walk the driveway hunting for the.  Alex mentioned that we should have done this for a hunt when they were little.  Dad and I could send the balls down the driveway and then send the kids out to find them, whoever found the most would win a prize.  Excellent idea why didn’t I think of that!  This year I think we were only 14 shy of the 48 sent.  Not too shabby!

Today’s menu not unlike many others will be Ham, not the spiraled one, I’m probably on the short list who is not a fan all the ones I have ever had have been so very dry, I go for the monster shank or butt ones, always juicy. Smashed roasted baby potatoes, steamed zucchini and summer squash and I am going to make carrot cake with cream cheese frosting.

Carrot Cake – Cream Cheese Frosting

4 Eggs

¾ Cup apple sauce

¾ Cup vegetable oil

2 Cups Sugar

2 Tsp vanilla extract

2 Cup AP flour

2 Tsp baking soda

2 tsp baking powder

½ Tsp Salt

2 Tsp ground cinnamon

3 Cups grated carrots

Optional

1 Cup chopped pecans

Preheat oven to 350’ grease and flour 9×13 pan

In a large bowl beat together eggs, sauce, oil, sugar and vanilla. Mix in flour, soda, powder, salt and cinnamon.  Stir in carrots. If using nuts fold in pecans. Pour into prepared pan.

Bake in preheated oven for 40-50 minutes, or until a toothpick inserted into the center comes out clean.  Let cool in the pan for 10 minutes. then turn onto a wire rack and cool completely.

½ Cup butter, softened

8 ounces cream cheese, softened

4 cups confectioners’ sugar

1 tsp vanilla extract

Optional

1 cup chopped pecans

Make frosting: in a medium bowl, combine butter, cream cheese, confectioners’ sugar, and vanilla. Beat until the mixture is smooth and creamy. You can also stir in some chopped pecans in this if you would like.  Frost cake once cooled.

Surf & Turf and Asparagus Risotto

My daughters last dinner at home before heading back to Japan was simple, delicious, expensive but worth every penny!  She wanted lobster since she cannot get a Maine lobster in Japan and since we are true New Englander’s that is the only kind of lobster we like. Trust me I have tried lobster in the Caribbean on several occasions from Cancun to Anegada and several places in between.  The only reason we keep trying it, is people rave about it at this location or this restaurant on this island etc.  So when we mention that we are from New England and we really only like Maine Lobsters they try very hard to build up what they experienced and that we just HAVE to try it.  So on a few occasions we bend and order it; YUP there is still nothing like cold water New England Maine lobster.

Steak is also something my daughter doesn’t really have a chance to enjoy being in so far from home.  So for this meal we bought our most favorite cut of meat Delmonico Ribeye.  Added a little Adobo, fresh cracked black pepper and a little kosher salt and that is all you need; oh and cook it to medium rare and then it just melts in your mouth.  My mouth is watering right now!

Lobster is very easy to make, generally one per person is fine.  Fill your largest pot with salted water cover and once it comes to a rolling boil add a lobster or two at the most, cover, set a timer for 12 minutes.  Remove from the pot and place on a platter or baking sheet with side, they are messy so if you have as a nice a husband as mine he will get all the meat out of the shells for you.  The mess stays on the tray and you can just toss; take the trash out of the house immediately or better yet make and eat this alfresco.

 

Risotto though time consuming is worth the extra effort.  I added asparagus to this one because we all love it except for my son but he doesn’t mind it as much in this form.

Risotto 

1 ½ Cup Arborio Rice

1 Quart Chicken Stock

½ Cup White Wine

1 medium shallot or small onion chopped finely

3 Tbs unsalted butter

1 Tbs Olive Oil

¼ Cup grated Parmesan Reggiano

1 Tbs chopped Parsley

Kosher Salt to taste

Bunch of Asparagus trimmed and cut into bite size pieces – boil in a little water just till tender but still crisp; remove to ice bath to stop the cooking process.

Heat the stock to a simmer in a medium saucepan, then lower the heat so that the stock just stays hot.

In a large, heavy-bottomed saucepan, heat the oil and 1 Tbsp of the butter over medium heat. When the butter has melted, add the chopped shallot or onion. Sauté for 2-3 minutes or until it is slightly translucent.

Add the rice and stir briskly with a wooden spoon so that the grains are coated with the oil and melted butter. Sauté for another minute or so; until there is a slightly nutty aroma. Don’t let the rice turn brown.

Add the wine and cooking while stirring, until the liquid is fully absorbed. Add a ladle of hot chicken stock to the rice and stir until the liquid is fully absorbed. When the rice appears almost dry, add another ladle of stock and repeat the process.

Note: It’s important to stir constantly, especially while the hot stock gets absorbed, to prevent scorching, and add the next ladle as soon as the rice is almost dry.

The rice will take on a creamy consistency as it begins to release its natural starches. Continue adding stock, a ladle at a time, for 20-30 minutes or until the grains are tender but still firm to the bite, without being crunchy. If you run out of stock and the risotto still isn’t done, you can finish the cooking using hot water. Just add the water as you did with the stock, a ladle at a time, stirring while it’s absorbed.

Stir in the remaining 2 Tbs butter, the parmesan cheese and the parsley, and season to taste with kosher salt.

Risotto turns glutinous if held for too long; you should serve it right away. A properly cooked risotto should form a soft, creamy mound on a dinner plate.

Being Frugal – It’s a good thing

Last weekend my refrigerator was severely overloaded; my house was full of people and I had a lot of “different” ingredients leftover after it was all said and done. I really hate throwing food away so I try to use up whatever is left over before it goes bad.  I love finding a recipe, buying the ingredients, making and eating whatever it may be.  I am sure I am not alone in this where you find yourself with some ingredients that generally are not found in your fridge very often.  I had some leftover Buttermilk, Blueberries (I forgot to put them out) and some Heavy Cream.  I was reading one of my magazines that I subscribe to this last week and came across a couple of recipes that uses some of my leftover ingredients; I guess it was meant to be.

So I made Blueberry Muffins and Blueberry Scones this morning and they are both really delicious! I have actually never made scones before. I have no idea what I was waiting for, they are very easy to make and they don’t have to be pretty; though I am sure I could have measured them out perfectly and formed them just right.  I did not, I just plopped them on the baking sheet and put them in the oven; 20 minutes later YUM!  Let’s just call my scones rustic and I am OK with it.

Blueberry Muffins

2 Cups AP flour

¼ Cup sugar

1 ½ tsp Baking Powder

½ tsp Baking Soda

½ tsp Salt

2/3 Cup Buttermilk

½ Cup Sour Cream

2 Eggs

3 + 2 TBS melted butter

1 6 ounce container blueberries

Sugar in the Raw for dusting after baking

Preheat oven 400’ grease 12 muffin cups, set aside

I tend to use my stand mixer for majority of my baking, but you need to be gentle with these dough’s, you don’t want to over mix them and you will need to fold in the blueberries so they do not turn to mush. With that being said, I used my stand mixer creature of habit.

Add all the dry ingredients to your bowl and stir together; set aside. Whisk together buttermilk, sour cream, eggs and 3 Tbs butter.  Add to flour mixture. Stir until just moistened. Do not over mix; batter should still be lumpy.  Gently fold in the blueberries.  Spoon batter into prepared muffin cups. Filling each three-fourths full; bake 18 minutes or until golden brown.

Brush with remaining butter and sprinkle with Turbinado Sugar aka Sugar in the Raw. Don’t stress over this, if you don’t normally use it you don’t need to buy any just use regular sugar.

On our honeymoon 25 years ago we were introduced to sugar in the raw on the island of Barbados and have been using it every morning ever since; in his coffee and in my tea.

Cool in muffin cups on a wire rack for 5 minutes.  Make sure to let the muffins rest the 5 minutes so they don’t fall apart but do not wait too long that they become soggy.

Blueberry Scones

2 Cups AP flour

1 Tbs baking powder

½ tsp salt

2 Tbs sugar

5 Tbs cold unsalted butter

1 6 ounce container of blueberries

1 ¼ Cup heavy cream

Gently whisk dry ingredients together. Grate the butter on the course side of a box grater and add to the dry ingredients; gently toss to combine.  Fold the blueberries into the dry mixture.  Make a well in the center and pour the heavy cream in. Fold everything together just to incorporate; do not over mix.  Divide dough into 12 equal pieces and form into mounds.

Preheat over 400’ either use parchment or silpat lined baking sheet.  Bake 16-20 minutes or until tops are barley golden brown.

Since my daughter is home from Japan for a short visit we had friends and family over this weekend.  I took Friday off from work and cooked up a storm.  I spent 8 hours making dishes and desserts enough to feed anywhere from 10 to 20 people.  Since we had family from as far away as Virginia to a few that live right up the road I decided to just have an open house. Come as early as you want and leave as late as you want. Lunch would be served at 1 and dinner at 6 and whoever was here in between would not go hungry. At my house no one ever goes hungry!

Chicken Rice Soup

Lunch Menu: 4 Bean Chili, Corn Bread and Pulled Pork with Cole Slaw Sandwiches, Clam Chowder and Cookies

Dinner Menu: Ham, homemade beans, Macaroni & Cheese, Chicken Soup and Texas Sheet Cake

When I know I need to feed this many people; I need to be very organized.  Thursday night I did all my grocery shopping so I could wake up in the morning and get going.  I envy the well-stocked kitchen & pantry on these types of occasions.  I have a large and a medium sized crockpot but could have used 2-3 more.  I have 2 large pots but could have used 4-5 more.  Unfortunately if I buy anymore cookware, dishes, glasses or utensils; my son will pitch a fit.  You see he does the majority of the dishes in the house and is running out of places to store all my treasures.  I kind of see what he means but I can’t help myself I need and use every item I bring home.  I have been using my class as an excuse to why a new sauté pan shows up or why I have a new Le Creuset in the cupboard. On occasion I do take inventory and clean out my stash, don’t tell Alex it’s just to make room for more.

Make this cake – Trust me it is delicious and easy!!!

I got this recipe from a friend, I am not sure why it is called this but I really really like it.

Texas Sheet Cake

Add to Sauce Pan

1 Stick of Butter

½ Cup Vegetable Oil

4 TBS Cocoa

1 Cup Water

Boil the above in a pan for 2-3 minutes

Sift together

2 Cups Flour

2 Cups Sugar

Pour over chocolate sauce and mix well

Add to the above

½ Cup Buttermilk

1 tsp Baking Soda

2 Eggs

1 tsp Vanilla

Mix well and pour into greased jelly roll pan

Cook at 400’ for 20 minutes

Frosting to be added to hot cake

Add to Sauce Pan (you can use the same one; I cleaned mine when the cake was in the oven)

1 Stick Butter

1/3 Cup Buttermilk

4 TBS Cocoa

Bring to a boil

Add the following

1 Box of Confectioner’s Sugar (roughly 2 ¾ Cup)

½ tsp Salt

1 tsp Vanilla

¾ Cup Chopped Walnuts (I added after so I could make ½ sheet without – work fast as the frosting hardens quickly)

Once cooled – slice into whatever size pieces you would like and store in airtight container – they don’t stick too bad so you can stack

I had a cooking class last week where we made 3 different chicken dishes.  We made Harvest Roasted Chicken, Skillet Chicken and Chicken Cordon Bleu. I had blogged a few weeks ago about the Chicken Cordon Bleu it was a huge hit as I knew it would be the white wine sauce is just that awesome!!!

I had 4 attendees at this class; 2 have come to previous classes and there were 2 new students.  I always find it quite comical some of the things I end up sharing with the class.  The cutting of an onion is always something new that we practice, this particular class we set a timer for searing chicken so they would leave it alone and let it brown.  Another tip shared was if you try to flip the meat and it doesn’t release from the pan to leave it alone.  Once it releases than you can turn it over.  One student couldn’t believe how long 5 minutes truly was; everyone wants to flip before its time. I see it ALL the time.  Let it set and get all yummy before flipping!!!

 

 

My daughter arrived from Japan Friday night for a 12 day visit.  SO excited to see her after her being gone for 8 months; we will be having several of her favorite meals while she is home.  She has already had mashed potatoes each of the 3 days of her being home in America.  We literally just finished eating a roasted chicken, mashed potatoes, carrots, peas and gravy for Sunday dinner.

Some of the things that she can either not get or it does not taste like it does here in the states, is bacon, steak and burger. We are all SO excited she is here and are looking forward to hearing all her stories.

Skillet Chicken

1 TBS Cajun Seasoning Blend

¼ Tsp Salt

¼ Tsp Pepper

4 Chicken Thighs – Bone in works best for this

2 TBS Olive Oil

4 Cloves, peeled and lightly smashed

8 Small red or new potatoes, about 1 ½ inches in diameter

2 medium onions chopped finely

1 Cup peeled and cut carrots

2 ribs Celery, halved lengthwise and chopped diagonally into ½ inch pieces

½ Red bell Pepper, cut into large dice

2 Tablespoons AP flour

1 Cup chicken broth

½ Cup Wine

2 Tablespoons finely chopped parsley

In a small bowl, combine Cajun seasoning, salt and pepper.  Rub mixture on all sides of chicken

Heat oil in a large heavy skillet over medium-high heat, add chicken (skin side down) cook until chicken is browned, about 3 minutes per side.  Transfer chicken to plate, set aside.

Add potatoes, onions, carrots, celery, garlic and bell pepper to skillet.  Cook and stir 3-5 minutes. Sprinkle flour over vegetables and stir to coat.  Slowly stir in chicken broth and wine.  Scraping up browned bits from the bottom of skillet bring to a boil, stirring often.

Reduce heat to medium-low.  Place chicken back into skillet.  Cover and cook about 30 minutes, or until chicken is done and juices run clear. Increase heat to medium-high and cook, uncovered about 5 minutes or until sauce is thickened Season to taste with salt and pepper. Sprinkle with parsley before serving.

My nemesis – the hard boiled egg white chocolate chip craisin cookies

If I were ever on Iron Chef or Chopped and the secret ingredient was an egg that you had to have at least one be hardboiled in some form or fashion per dish. I would be chopped first round and it would be the biggest Iron Chef upset bar none. It’s not that I can’t cook them so they come out perfect which I can; they come out yellow, no brown rings (overcooked) or still semi raw but they are golden yellow as they should be. I for some strange bizarre reason cannot peel the damn things without making a complete and utter mess of the kitchen, the sink and worst of all the poor little egg. I have tried adding vinegar, salt separately and together.  I have tried peeling the cold, warm, hot. under water without water and even with a spoon.  Nothing works for me.

I have seen many deviled eggs in my days, not a huge fan of eating them but when I see them at parties and cookouts; trust me I look to see if the whites are a beaten up as mine when I am done with them. I have a couple of theories on this. Either everyone else has mastered the process and I am destined to never be included in that crowd OR they make twice as many as they need and only show off the pretty ones. Earlier this week I made 5 hardboiled eggs; my guys love deviled eggs which is the only reason I keep making them. I only had two that were worthy of going out in public, thankfully the guys just throw them in their mouths and don’t bat an eye at them. One was SO pathetic that there was no way that it could even be turned into a devil, that one I ended up cutting up and threw it on my salad that I made for my lunch.  I usually post a picture or two but I am embarrassed to show off my ineptitude with hardboild eggs.

My deviled eggs are traditional – a little bit of white vinegar, some dry mustard and some mayo, a little salt and white pepper Mix well and I put that into a zip loc bagie, clip a corner and fill the eggs.  Sprinkle a little paprika et voila.

Since I didn’t take pictures of the eggs I thought I would share something that I know is yummy and looks good to boot.

1 Cup softened unsalted butter (not melted)

1 Cup packed brown sugar

1/2 Cup Sugar

Cream the above –  Beat in

2 Eggs

1 tsp Vanilla

Combine the below

1 1/2 Cup Flour

1 Tsp Baking Powder

1/4 tsp Salt

Stir in

3 Cups old fashioned oats

Add a bag of white chocolate

and a 10 oz bag of craisins

either spray a sheet pan or cookie sheet or use a silpat – drop by spoonfuls onto sheet and bake at 350′ for 10-12 minutes – do not over cook, let set on the sheet for a minute or two ENJOY!
