- 3 cups all-purpose flour
- 1½ cup old-fashioned oats
- 1½ cup packed brown sugar
- ¾ teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1¼ cup cold butter divided
- 5-6 cups apples peeled, sliced thin
- 1 cup sugar
- 3 tablespoon cornstarch
- 1 cup cold water
- 1 teaspoon vanilla extract
preheat oven to 350°F. grease a 9x13 baking dish.
in a large bowl, combine flour, oats, brown sugar, cinnamon and baking soda; cut in 1 cup plus 2 tablespoons of the cold butter until mixture resembles coarse crumbs. Set aside 2 cups of this for the topping. Press the remaining into the prepared baking dish. Arrange sliced apples over the top.
in a small saucepan, combine the sugar, cornstarch, water, vanilla and the remaining 2 tablespoons of butter. Bring to a boil, cook while stirring for 2 minutes or until it thickens; pour over the apples. Sprinkle with the reserved oat mixture.
bake until the top is lightly browned, 35-45 minutes. Cool in the pan on a wired rack.
