Creamy Chicken Chili

A simple warm and cozy meal on cold day.
Course Chili, dinner, lunch

Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2-3 cloves garlic minced
  • cups chicken stock
  • 2 cans diced green chilies
  • teaspoons ground cumin
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ lime juiced
  • 3 cans great northern beans
  • 1 cup sour cream or Greek yogurt
  • 1 cup corn
  • 2-3 large handfuls chicken rotisserie works great

Instructions
 

  • In a large Dutch oven or soup pot add the olive oil over medium heat, add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and the spices and cook for another minute or so. Add the broth, chilies and lime juice. Season to taste with salt and pepper.
  • Open and drain the beans, reserve one of the cans and place it in a blender to puree. Use some of the broth from the soup pot if needed. While this is optional it does help to thicken it a bit. Add the all the beans, the corn and let this simmer for 20-30 minutes.
  • Remove from the heat and add the sour cream and chicken to heat through. Serve warm.
  • Optional toppings: Shredded Cheese, Avocado slices, tortilla chips, cilantro, green onions.
