Marinated Chicken Thighs

a very flavorful marinade that comes together quickly for any night of the week meal
- 8 chicken thighs
- ¼ teaspoon Kosher salt
- ¼ teaspoon black pepper
- ¼ cup olive oil
- ¼ cup low sodium soy sauce
- ¼ cup Dijon mustard
- 2 tablespoons maple syrup
- 2 tablespoons brown sugar
- 2 cloves garlic minced
Marinade
in a large bowl, whisk together the olive oil, soy sauce, mustard, syrup, brown sugar and garlic. Or skip the bowl and dump everything into a zip loc bag. Add the chicken to the marinade in the bag for at least 10 minutes. If you can do an hour or even longer I say make it happen.
When you are ready to bake. Preheat the oven to 425°F. Remove the chicken from the marinade and place on a tinfoil lined baking sheet.
Bake for 20 minutes and then place your oven on broil to brown up the top of the chicken and finish cooking. Remove from the oven and serve immediately.
