In a stock pot add a little olive oil over medium heat. Add the sausage and break it up while it is cooking, after 3-4 minutes add the diced onions, cook for another 2-3 minutes, add the garlic and cook for another minute.
Add the Oregano and Basil and the beans, tomatoes and broth and bring it to a simmer until it cooks down and makes a nice broth to the thickness of your liking.
Add a parmesan rind and let it sit for a bit and then remove the rind and add the freshly grated parmesan. Top with some fresh chopped parsley.
