Shirred Eggs
To Shirr or not this is a tasty satisfying meal to start your day and very versatile. Use what you have on hand.
- 4 x-large Eggs however many people are eating
- 2 pieces Breakfast sausage crumbled and browned
- ½ small onion diced
- ½ cup roasted tomatoes or use cherry tomatoes diced
- 2-3 stems asparagus sliced
- cheddar cheese shredded
- Parmigiano-Reggiano cheese freshly grated
- scallions diced
- Kosher salt and black pepper to taste
In a small saute pan brown the sausage along with the onion, add the tomatoes and asparagus for 1 to 2 minutes.
Spray your small dishes with nonstick cooking spray. Fill with sausage mixture, cover with cheddar cheese, crack an egg in each dish. Sprinkle with parmesan and scallions. Season with salt and pepper.
bake at 375’F for 12 minutes or until the whites are set. Be careful if using a ramekin, they will be hot. Serve some toast along side.
