Blanket Dumplings
an easy version of a dumpling, if you have ever folded a dumpling, it does take some time, especially if you don't do it very often.

- 1 pound ground pork or chicken or whatever you would like
- 1-2 scallion green and white parts diced
- ¼ cup soy sauce
- 2 cloves garlic minced
- 1 tablespoon ginger
- ½ teaspoon kosher salt
- 1-2 tablespoons olive oil
- 20+ wonton wrappers
In a medium bowl add the ground pork, and all the seasonings. Mix well.
In a large frying pan add about a tablespoon of olive oil, then add a tablespoon sized ball of your mixture into your heated pan. Cover each ball with a wonton wrapper. Add about a ¼ cup of water and cover immediately so they steam. Once the water has evaporated remove the cover and allow them to continue cooking until they brown up nicely.
You can sprinkle some more of the diced green onions, a little chili crisps if you have some. I filled up a small bowl with sweet chili sauce and another little bowl with some soy sauce with some diced chives.
