Blanket Dumplings

Firstly Happy Mother’s Day! I just got back from watching my Granddaughter run in her first Healthy Kids Running race. OK how stinking cute so many littles running to get to the finish line. She came in fourth, not sure how many 3 year olds there were but it was more than I could have handled. Looking forward to next week.

OK these have popped up SO many times over the last couple of months I had to try them. I like both chicken and pork and you can easily season them both to be delicious so I would choose which ever one you wanted. I don’t think I have ever used or even had ground beef, not sure how that would taste but as I always say, you do you.

I used ground pork, I didn’t have scallions but my chives are coming up nicely so I used them, I would prefer the green onions but me being me I used what I had on hand. My first batch were too big for a single bite. The next ones I made much smaller and I prefer the little ones, plus it helped crisp up the wrapper since there was more of the wrapper touching the pan. Always learning!

I should have grabbed a jar of chili crisps to make them pretty. Where we like a little heat I am not even sure if I like chili crisps, I do love how they look on food so I just added it to my grocery shopping list, we’ll see. I will have to report back if I am keeping the jar on hand. Hands down my favorite dipping sauce for my dumplings is Mae Ploy Sweet Thai Chili Sauce. I have two jars on hand at all times.

Blanket Dumplings

an easy version of a dumpling, if you have ever folded a dumpling, it does take some time, especially if you don't do it very often.
Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Course dinner, lunch, Snack

Ingredients
  

  • 1 pound ground pork or chicken or whatever you would like
  • 1-2 scallion green and white parts diced
  • ¼ cup soy sauce
  • 2 cloves garlic minced
  • 1 tablespoon ginger
  • ½ teaspoon kosher salt
  • 1-2 tablespoons olive oil
  • 20+ wonton wrappers

Instructions
 

  • In a medium bowl add the ground pork, and all the seasonings. Mix well.
  • In a large frying pan add about a tablespoon of olive oil, then add a tablespoon sized ball of your mixture into your heated pan. Cover each ball with a wonton wrapper. Add about a ¼ cup of water and cover immediately so they steam. Once the water has evaporated remove the cover and allow them to continue cooking until they brown up nicely.
  • You can sprinkle some more of the diced green onions, a little chili crisps if you have some. I filled up a small bowl with sweet chili sauce and another little bowl with some soy sauce with some diced chives.
