I wish my garden looked like this now, this was back in 2017 so many things have changed since then. We had to move the flower garden to make room for more veggie beds. Since moving the flower garden I don’t even see any Phlox out there anymore, and if I did the deer eat them before they get a chance to bloom. I will have to get some more plants and move them even closer to the house so I can keep an eye on them. I am pretty tired of spending time and money on gardening just to feed them. Not to say if they were in need I wouldn’t share but there are plenty of other places around they don’t need to eat my things.
We tried to eat outside last night with the family over and the bugs drove us inside again. Once everyone was inside I stayed out to cook and not one bug came by hmmmm. I wonder who was the was attracting them to the patio area. We usually blame it on the dogs running in and out of the grass and the woods. Anyway yesterday was a beautiful day outside. I have been slowly getting my yard in summer mode. I planted a few flower containers. The porch is slowly getting cleaned off of all the lawn furniture. I removed the lights from the blue spruce that we light during the winter. It’s a process!
I usually have go out and buy all of my vegetable plants this weekend but we invested in some new garden mats and are waiting for them to arrive. I don’t mind weeding here and there; but it’s been getting pretty crazy over the last couple of years and I just don’t have the time to spend half a day weeding the gardens a couple of times a month.
I tried to buy some corn on the cob at my local market but it looked terrible. I opted to forgo having any since it’s really not available around here yet, I know I called our local farm stand and they did not have any either. So this salad will have to wait a little while longer. But if you happen to be able to get your hands on some, this is a great way to enjoy an ear or two. It is a light salad with great flavor and comes together quite quickly. Always a crowd pleaser.

Summer Garden Salad
Ingredients
Dressing
- ⅓ cup apple cider vinegar
- 2 teaspoons honey
- 1 small garlic clove minced
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Salad
- 1 cup cherry tomatoes sliced
- ½ medium cucumber halved, seeded and sliced thin
- ½ medium yellow summer squash quartered and sliced thin
- ¼ medium sweet onion sliced thin
- 1 ear corn kernals removed
- 1 tablespoon fresh basil chopped or torn
Instructions
- Whisk the first salad dressing ingredients together in a medium bowl. Add the prepped veggies and stir well to combine. Let sit at room temperature for at least 30 minutes and up to 2 hours. Stirring occasionally before serving. Garnish with the basil.
