Sausage Parmesan Cannellini Soup

We are in a little bit of a cold and rainy spell at the moment. I opened my blog and was wondering what I was going to make with/for you today. Because of it being so cold I wanted to make and eat some warm comforting soup; so I made some.

I had a couple of sweet Italian sausage links in the fridge, I didn’t have a can of crushed tomatoes so I substituted a can of Rotel which is great because it brings a little heat without me adding any crushed red pepper. I just made some chicken stock and I always have some sort of beans in the pantry. Soup doesn’t have to be hard to make, with a few basic ingredients you can make a very satisfying meal.

Sausage Parmesan Cannellini Bean Soup

A warm comforting soup

Ingredients

  • 2 Sausage links casings removed
  • 1 can Cannellini Beans drained
  • 1 can Rotel
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 cups chicken broth
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ cup freshly grated Parmigiano-Reggiano cheese
  • Parsley for garnish
  • Kosher salt and black pepper to taste

Instructions

  • In a stock pot add a little olive oil over medium heat. Add the sausage and break it up while it is cooking, after 3-4 minutes add the diced onions, cook for another 2-3 minutes, add the garlic and cook for another minute.
  • Add the Oregano and Basil and the beans, tomatoes and broth and bring it to a simmer until it cooks down and makes a nice broth to the thickness of your liking.
  • Add a parmesan rind and let it sit for a bit and then remove the rind and add the freshly grated parmesan. Top with some fresh chopped parsley.
