4 Bean Chili

What are you making today for the big game? Are you watching the game? Do you know what game I am talking about? Honestly it doesn’t matter to me who is playing in the Super Bowl, though it is definitely better when the Patriots are playing in it. We watch it every year and it’s not just for the commercials, halftime show or for all the food that we have on hand or if I was able to get into a pool, the money I could possibly win. OK it is for all of the above. I just had to look up who is singing the national anthem. I hope Charlie Puth does a good job. My gauge on a good national anthem is if I get goosebumps. I know that’s a tall order but the song gives me the feels when it is sung well!


On the menu today I am going to my freezer for some of it. I pulled out some Chili which I just looked to see if I could place a link here to my families favorite chili recipe that I make quite often and I shared it once a long time ago and not well so that is what I will share with you today. I also had some Italian Meatballs in Marinara sauce for grinders later.

4 Bean Chili

a family and friends favorite

Ingredients
  

  • 1 pound ground beef
  • 1 pound ground pork subs. ground turkey
  • 1 pound sweet Italian sausage
  • 1 green bell pepper diced
  • 1 large yellow onion diced
  • 3 ribs celery diced
  • 2 28 ounce cans San Marzano plum tomatoes
  • 2 cans Rotel
  • 1 tablespoon ground cumin to your liking
  • 1-2 tablespoons chili powder to your liking
  • 2 cans pinto beans drained and rinsed
  • 2 cans black beans drained and rinsed
  • 2 cans kidney beans drained and rinsed
  • 1 large can your favorite beans my go-to is Bush's original
  • 1 package chili seasoning mix
  • Kosher salt and black pepper

Instructions
 

  • In a large stock pot add the a little oil over medium heat. Add all the ground meat and brown while breaking up and mixing together. Once cooked through remove and set aside. Get rid of most of the fat.
  • In the same pot with a little bit of the grease, add the onion, green pepper and celery. Sauté briefly until the onions are translucent. Add the Tomatoes, You can crush them as I do when I add them or just break them up as they cook with your spoon. Add the Rotel, cumin and chili powder to taste. Bring to a boil and cook the veggies for about 8-10 minutes.
  • Add the beans, browned meat and the chili seasoning packet. Partially cover and let this simmer for 4 hours.
  • Serve with shredded cheddar cheese, sour cream and chives or green onions. One of my favorite ways is for my husband to make me an omelet with chili. It is the best!
