Split Pea Soup – using hambone

You may have probably used, tossed or froze your ham bone from Easter. If you still have it around I made a split pea soup that my husband said he would pay money for. That’s a pretty good compliment. I love all kinds of soup but I am not sure if I have ever made a split pea. I used to always give my ham bones to my mother-in-law and she made it. She is going to be 93 in a little over a month and doesn’t have any interest in cooking. She is big on reheating and will eat whatever I put in front of her.

I think my hesitance is I never really liked peas so the sound and the look is a lot to be desired for me at least. Don’t tell my mother but this is actually pretty good. Look at me growing LOL

It’s really an easy recipe to make, and it’s mostly hands off which is very nice. I love the kitchen and cooking but I also have other things I need to do so throwing something on the stove top, in the oven or even in a slow cooker are pretty helpful with the added benefit it makes your home smell awesome.

Ingredients

  • ½ stick unsalted butter
  • 1 large Onion diced
  • 1 large Carrot peeled and diced
  • 2 Celery Sticks washed and diced
  • 3 cloves Garlic minced
  • 1 bag dried split peas rinsed and sorted
  • 1 Ham bone
  • 1 bay leaf
  • 1 teaspoon thyme
  • 6 cups chicken stock homemade is best
  • 2 cups water
  • Ham diced
  • Kosher salt and black pepper to taste

Instructions

  • In a large Dutch oven, melt the butter over medium low heat. Add the onion, carrot, celery and a little salt and pepper. Cook until the veggies are soft, roughly 8 minutes. Add the garlic and cook for another minute. Stir in the split peas along with the Ham bone, bay leaf, thyme and chicken stock plus the water.
  • Bring to a boil, then reduce the heat to just a simmer. Leave uncovered for an hour to an hour and half, stirring occasionally, until the split peas are cooked down and the soup is thickened to your desired consistency. If it gets too thick you can just add a little more stock or water. At the very end season with salt and pepper and more thyme if needed. The add the diced ham to heat through just before serving. Add some croutons for a little crunch and a little black pepper.
