Banana Pancakes

It seems that no matter how many bananas I buy each week there is always one left. I wonder if it is so one of us makes Sunday Banana Pancakes. Sometimes our inspiration is hearing Jack Johnsons song Banana Pancakes playing. My husband usually is the one that makes them but he is currently out of commission. He works WAY too hard and has a hard time sitting. Well; when you mess up your back, you sit!!!


My 1 1/2 year old granddaughter was sitting on the island “helping” me so I didn’t get a plated picture.


So I didn’t have any new recipes to share this morning so I made the Banana pancakes. I have never added cinnamon to them and I really liked it, so that will be my “new” thing. I wonder the next time my husband makes them if he will add cinnamon. He really liked them as well.

Banana Pancakes

A quick homemade pancake recipe
Prep Time 5 minutes
Cook Time 9 minutes

Servings 4 people

Equipment

  • 1 griddle pan

Ingredients
  

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon cinnamon
  • ½ tasspoon salt
  • 1 large ripe banana mashed
  • 2 large eggs
  • cups milk

Instructions
 

  • In a large bowl, whisk together the dry ingredients. Flour, baking powder, salt, cinnamon and set aside.
  • In a medium bowl combine the mashed banana and milk together. Add the wet to the dry whisking until just combined, batter should be a little lumpy.
  • Heat your griddle or nonstick pan over medium heat. If needed spray with non-stick spray. Once up to temperature, do a tester cake.
  • Using a measuring cup or a small ladle and pour how ever many circles fit on your plan, leaving room to flip them. Cook until the pancake fluffs up and gets golden brown 2-3 minutes. Flip and cook on the other side until cooked through, 1-2 minutes. Makes about 10 pancakes.

Yes my griddle is used ALOT!! and yes I clean it all the time.  It’s almost 22 years old and part of my Viking stove. And I love it!!!
