Chicken Gnocchi Soup

Today is definitely a soup kind of day around here and from the sounds of it most of the country. It is cold, snowy and sleet and ice expected for the rest of the day into night. I just hope we don’t lose power; though I am preparing for it to go out. My preparing is more of making sure I am showered, and the washing and dishes are all done. When we lose power we have no water, no heat and obviously no electricity. So I have a couple of buckets filled with water and made a large pot of soup. The one good thing is I do have my gas stovetop.

This morning was quiet around here as my husband was out and about plowing. I hadn’t made anything worth writing about last week so I was going to write about some of my favorite soups that I had previously written about. It’s like when I used to watch the movie Ratatouille. I had a craving to make soup and did. This morning reading my prior soup blogs gave me a craving to make some soup. Next up is what do I have on hand.

There was some chicken breast I could use up in the fridge, I had some gnocchi in the pantry and I have been making a lot of chicken stock over the last few months so there is a lot of chicken stock in the freezer. Sounded like the start of a creamy soup in the works.

a quick creamy soup with a little heat. You decide how much heat.

Ingredients
  

  • 2 tablespoons olive oil
  • Kosher salt and black pepper
  • 1 pound boneless skinless chicken breast diced
  • 2 tablespoons butter
  • 1 large yellow onion diced
  • 3 medium carrots peeled and diced
  • 2 stalks celery sticks diced
  • 3 cloves garlic minced
  • 2 teaspoons Italian Seasoning
  • ½ teaspoon Cajun Seasoning
  • 2 tablespoon corn starch
  • 2 cup milk
  • 1 Parmesan rind
  • 1 package potato gnocchi

Instructions
 

  • Cube the chicken breast and then season with salt and pepper. Heat a large stock pot and drizzle with the olive oil. Add the chicken pieces, don't over crowd so the chicken browns and you get that lovely flavored brown bits on the bottom of the pot and the chicken cooks through. Transfer browned chicken pieces to a plate or a bowl and set aside.
  • Lower the heat and add the butter to the pot. Once melted add the onions, carrots and celery. Cook for about 5 minutes or so, you want the onion translucent. Add the garlic and the seasoning stirring for about 30 seconds.
  • Take a few tablespoons of the milk and add the corn starch to make a little slurry. Add this and the rest of the milk to the pot. Add the milk and the Parmesan rind. Simmer for 10 - 15 minutes until the veggies cook through.
  • Add the gnocchi and the broccoli and bring to a quick boil for 5 minutes. Turn off the heat and add the chicken and the juices from the plate back into the soup. Remove the parmesan rind and serve warm.
