Shirred Eggs

I am actually not a big breakfast person, don’t get me wrong I love all kinds of breakfast foods, I just don’t wake up and immediately want to eat. My husband says the only reason he gets out of bed is because he is starving – insert eye roll here! He has been on a Sunday morning banana pancake kick for months now. I think I need to start having things on hand so maybe he can branch out a bit. Though this morning he asked if I could taste anything different in his pancakes. I couldn’t come up with anything except they were fluffier than what he usually makes.

He said he added rum to the batter, what?!? thankfully I didn’t taste it. When we were in Barbados last month, we took a rum distillery tour and the speaker mentioned she added rum to her pancakes. They make a liquor type of rum that kind of tastes a little like bailey’s. That’s the one she adds to her pancakes, not the one you drink with coke. That’s two eye rolls before 9am. Gonna be an interesting day!

I think I will be making breakfast next weekend and since my asparagus is coming in and needs to be eaten I will make either a frittata or these yummy shirred eggs. You can add whatever you like or have on hand. They are very easy to make and kind of fun to serve, you get your own little ramekin meal. Of course if you don’t have ramekins just add your eggs to the top of your meat and veggie mixture in your skillet and place it in the oven. You’ll still have something delicious and satisfying for breakfast.

Here is why they are called Shirred eggs

They are eggs that have been baked in a gratin dish with a flat bottom. Traditionally they have been cooked in a dish called a shirrer, from which the dish gets its name, but the name now applies regardless of the type of dish in which they are baked

Shirred Eggs

To Shirr or not this is a tasty satisfying meal to start your day and very versatile. Use what you have on hand.
Course Breakfast, Brunch

Equipment

  • 4 Ramekins optional

Ingredients
  

  • 4 x-large Eggs however many people are eating
  • 2 pieces Breakfast sausage crumbled and browned
  • ½ small onion diced
  • ½ cup roasted tomatoes or use cherry tomatoes diced
  • 2-3 stems asparagus sliced
  • cheddar cheese shredded
  • Parmigiano-Reggiano cheese freshly grated
  • scallions diced
  • Kosher salt and black pepper to taste

Instructions
 

  • In a small saute pan brown the sausage along with the onion, add the tomatoes and asparagus for 1 to 2 minutes.
  • Spray your small dishes with nonstick cooking spray. Fill with sausage mixture, cover with cheddar cheese, crack an egg in each dish. Sprinkle with parmesan and scallions. Season with salt and pepper.
  • bake at 375’F for 12 minutes or until the whites are set. Be careful if using a ramekin, they will be hot.
    Serve some toast along side.
