It is definitely Fall around here, I had the kids come over yesterday to help me put away all the cushions from the patio, the potted plants were done because of the frost the other day so they needed to be tossed. Plus all the toddler toys need to find a home under cover; boy do toddler toys add up lol we do have the best place to play outside and my granddaughter loves being outside.
Fall for me means soup season, I am pretty sure you know that about me if you are a fan. I am away on business this coming week and my husband hurt his back AGAIN this time blowing leaves grrrrrr. Anyway I figured I would be nice and help him out a bit. I will make up a few things that he can just heat up since standing too long is not in the cards yet. Soup and chili are the gift that keep on giving. So my shopping list is pretty much along those lines.
This is a flavorful soup that comes together pretty quick. Plus who doesn’t love tacos and this is just another way to have that yummy taste of tacos that you can just heat up. No it will never replace the handheld version but it will make my husband happy to not have to do to much.

Ground Turkey Taco Soup
Ingredients
- 1 package ground turkey
- medium onion diced
- 1 can diced tomatoes or you can use rotel
- 1 can tomato sauce
- 2 cans kidney beans drained and rinsed
- 1 package taco seasoning
- 2 cups corn fresh or canned
- 2 tablespoons extra virgin olive oil
- Kosher salt and black pepper
- 4 cups chicken broth homemade, or you can use water
Instructions
- Heat a large stock pot or Dutch oven on medium high, add the olive oil and the ground turkey. add the diced onions and cook until the turkey is browned and the onions are softened around 5-7 minutes. Add the taco seasoning. Cook for another minute or so.
- Add the beans, tomatoes, corn and broth. season with salt and pepper.
- Bring to a boil and then lower the heat to a simmer. Let it simmer for 20 minutes. To develop deeper flavor simmer for another 20-30 minutes.
