Baked Cod and Mango Salsa

Happy Father’s Day!!!

This is probably not the first thing that comes to mind of what to make for the men in your life. Personally my husband would and does love this.  When you think of Father’s Day – I am sure you think of Grilling something, technically you could grill some fish and spoon this mango salsa over it. I am pretty sure it would be a hit. But my husband asked for a greasy burger for today.  So the kids and Grandparents are coming over for burgers later. The weather is kinda crappy out and definitely not BBQ weather so I thought I would give smash burgers a try. I have eaten them many times, just never tried making them myself; how hard could it be?

I think the hardest thing about making mango salsa; would be finding a nice and ripe one in the store. Second only to slicing it open. There is a specific way that you need to slice a mango.  If you look at the mango there is a flat side that you place on the counter.  Then you are going to slice on either side of the large seed in the middle. Then you can slice off the smaller sections so you end up with a total of 4 pieces, 2 large and 2 small plus the large seed which you toss. I make slices through the mango but leaving the skin in a cross hatch pattern then you can peel back the skin and slice off the squared mango flesh.

baked cod and mango salsa

a simple quick any night meal
Course Main Course
Servings 4 people

Ingredients
  

Fish

  • 1 1/2 pound cod fillet cut into 3-4 sized portions
  • Kosher salt and black pepper season both sides
  • paprika if you want to add a little more seasoning

Mango Salsa

  • 2 ripe mango's peeled and diced
  • 1/2 red pepper diced
  • 1 fresh lime squeezed
  • 1-2 fresh scallions diced
  • 1 teaspoon cilantro fresh and chopped

Instructions

  • preheat oven to 400'F bake for 20-30 minutes just until the fish is cooked through and flaky

mango salsa

  • while the fish is in the oven, add all the ingredients into a bowl and mix to combine.

sweet potato fries

  • peel and slice up one or two sweet potatoes into wedges or fries. Add a little olive oil, salt and pepper plus some fresh chopped rosemary. place on a baking sheet and add to the oven with the fish. takes about 20 minutes or longer if you want them a little browned.
