Thanksgiving Leftover Egg Roll

What did you do with your leftovers?  I did nothing with mine as my husband and I left around 5:30 in the morning the day after Thanksgiving on a week long vacation to FL. My daughter however made egg rolls with some or ours. I am so proud of her. I was kinda sad that I wasn’t going to be here. But also happy to get away for a bit. In FL we were staying with friends so don’t feel too badly for me. We had some of their leftovers and I was able to make some turkey soup and made some lovely broth for their freezer. I couldn’t sell her on the idea of eggrolls. If you are not sold on them, you are missing out on something delicious. I especially like dipping them in cranberry sauce that we add a little sriracha in.

We have done these a few times over the years, not every year I mean you have to change it up a bit right?  I remember the first time I was going to try this. My husband is not a fan of egg rolls and was not thrilled I was making them. I had to assure him that these are not your average eggrolls. I am not putting cabbage and anything like that in them. I filled mine with turkey, stuffing and cranberry sauce. My daughter said she didn’t any cranberry sauce to hers. Either way I can’t wait to try hers. She put the rest of hers in the freezer for later.

IMG_3659So I hope you think about changing it up a bit next time around. If you come up with another fun way to eat up all those leftovers, there are ALWAYS leftovers right? My husband always complains I make too much food. I think you are supposed to for Thanksgiving, JUST to have all the leftovers. I think he was a little worried this time around because we were leaving. I asked my daughter; who was going to be home alone; what are you going to do with all the leftovers and she said “I am going to eat like a king all week” there you go!

Turkey and Stuffing Eggrolls

A great and unique way to use up Thanksgiving leftovers.

Ingredients
  

  • Turkey diced up small
  • Stuffing diced up small
  • Cranberry sauce optional
  • eggrolls
  • 1 egg beaten
  • oil for frying

dipping sauces

  • cranberry sauce
  • gravy
  • sriracha

Instructions
 

  • You want to chop up the turkey and stuffing pretty small so they fit nicely in the wrappers. Follow the instructions on the back of the package of egg roll wrappers It will tell you how to fill, wrap, seal  and fry.

Dipping sauces

  • There are a few that we like, I make my own cranberry sauce, or you can use the whole berry cranberry sauce in a can. I personally like it better than the jellied version, but I say use what you have. You'll want to thin it out a bit to make it a dipping sauce. Add some sriracha for a little zip. You can thin it out with a little orange juice or water. place it all in a small sauce pan and bring to a boil for a minute or two.
  • You can also use your leftover gravy. Thin it out with a little chicken stock or turkey stock if you have any.
  • Another sauce is if you have any sweet Thai chili sauce. That's one of my favorite for most anything fried.
