Last Sunday I was kind of an over achiever; of sorts. I must have been hungry when I went grocery shopping since I came home with short ribs, a brisket and some sweet Italian sausages and a plan; well kind of a plan. I hadn’t planned on making everything on Sunday but it didn’t stop me. I had both of my crockpots going and some marinara sauce bubbling on the stovetop.

We had the short ribs for dinner and they were fabulous. With a little prep your slowcooker/crockpot can make some pretty great food. They get kind of a bum wrap and now with Instapot and pressure cookers I am not sure if any of you use them anymore. I do not have either of the latter, until I find a better storage solution for ALL of my gadgets I am not getting anymore.

I ended up making BBQ brisket nachos one night, then turned the rest into sandwiches with some coleslaw. The sauce we had spaghetti one night and then turned the rest into lasagnas. I am going to share the short ribs I made not only because they were delish but it’s the one I actually took pictures of the finished product. It was kind of nice having meals planned a bit or at least have some options in the fridge.

Short Ribs in a Slow Cooker
Equipment
- 1 slow cooker
Ingredients
- 2-3 pounds boneless short ribs diced into large pieces
- 3 tablespoons olive oil divided
- 3 medium carrots peeled and diced
- 1 large yellow onion diced
- 2-3 cloves garlic minced or finely chopped
- 2-3 tablespoons tomato paste
- 3 tablespoons flour
- 1 cup red wine pick something you would drink
- 2½ cups beef broth
- Kosher salt and black pepper
Instructions
- in a medium sized pot add 1 tablespoon oil over medium heat add the onion, carrots cook for 3-4 minutes. Add the tomato paste and garlic cook for another minute. Remove to a plate.
- season the beef all over with salt and pepper. Roll each piece into the flour. Add the remaining oil into the pot and once hot add each short rib piece trying not to overcrowd. Brown each side or all. The browner the better flavor. Remove and place into the slow cooker top with the carrots and onions.
- Add the red wine and scrape up all the browned stuck on bits. Add the broth and let this boil for 3-5 minutes. Pour this over the beef and vegetables in the slow cooker. Place on low for 6-8 hours.
- Serve over mashed potatoes.
