Beef Brisket in a slow cooker with BBQ sauce

Not sure how your weather is where you are but it is currently 8 degrees Fahrenheit outside and I am very happy to be sitting at my kitchen island with a hot cup of tea and no real plans today. I hope you are in your happy place as well and if you are in frigid weather hunker down and check out your pantry, fridge and freezer and get into the kitchen and make something to warm your house and your belly. Soup is my go-t0 or maybe some chili. I plan on making some sort of soup later today.

I know using your slow cooker would not really help heat your home but if you happen to have a small brisket on hand this is a great recipe you should try. I found a 4 pound brisket at the store I shop at, which mind you I have only ever seen monster ones that wouldn’t fit in my crockpot. So I was kind of excited to try. I have only ever cooked brisket in my oven which you can do and it would most definitely heat your home for the next 4-5 hours. It takes a long time to cook a brisket, there is so much connective tissue that needs to breakdown and that takes time.

I enjoyed my brisket by making nachos one night, my daughter made a quesadilla. The next night I made up some coleslaw and we had pulled BBQ brisket sandwiches. Sorry I never got any pictures of the finishes meals but I will most definitely be making this again.

Equipment

  • 1 slow cooker

Ingredients
  

  • 3-4 pound beef brisket
  • 1 tablespoon oil

Rub

  • 1 tablespoon brown sugar
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ¾ teaspoon ground mustard powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper

BBQ sauce

  • 3 cloves garlic minced
  • ½ cup apple cider vinegar
  • cups ketchup
  • ½ cup brown sugar
  • 1 teaspoon cayenne pepper
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons black pepper
  • 2 teaspoons onion powder
  • 2 teaspoons ground mustard powder

Instructions
 

  • In a small bowl mix all of the rub ingredients together. Rub all over the brisket. Let rest on the counter for 30 minutes or in the fridge overnight.
  • In a medium sized bowl add all the BBQ sauce ingredients together. Add half of the sauce in the bottom of the slow cooker, add the brisket and squish it if you have to. cover the brisket with the rest of the BBQ sauce and turn on low for 8-10 hours.
  • remove the brisket to a sheet pan or tray. Pour the liquid from the slow cooker to a sauce pan and bring to a boil. Simmer until it thickens. It will become a little thicker once it cools as well.
  • In the meantime, drizzle the brisket with the oil then roast in a 400°F oven for 15 minutes until brown spots appear. Remove and baste generously with the sauce, return to oven for 5 minutes. Remove and baste again, then return to oven for 5–10 minutes until it's caramelized

Serving Ideas

  • Slice against the grain and serve with some mashed potatoes. Or you can chop it or shred it for BBQ brisket sandwiches along with some coleslaw. This is also fabulous as nachos or a quesadilla.
