Yesterday I spent a lot of it online for the foundation I am on the board of. We put on a golf tournament the end of June going on 24 years now. We did have to miss one do to covid but we having been going strong for a long time now and it takes a lot of planning. We our first meeting tomorrow night, just getting ready for it.
I had some chicken in the fridge and wanted something kind of quick to throw in the oven. I found this quick cheesy baked chicken online and thought I would try it. I will admit I am not a huge fan of cream of chicken or mushroom soups to be honest, but I still have them in the pantry. I did have to check the dates as they have been in there quite a while. We were good, still had some time.


If you are looking for a quick comfort dinner with little prep give this one a try. I opted to saute a small onion and minced garlic to add more flavor.

Cheesy Baked Chicken
Equipment
- 1 baking dish
Ingredients
- 2 large chicken breasts sliced in half to make them thinner
- 1 drizzle canola oil for the baking dish
- 1 medium head of broccoli cut into medium sized florets
- 1 tablespoon paprika
- 1 tablespoon herb seasoning mixture use your favorite or create one with what you have on hand
- 1 can cream of chicken soup opt for low sodium or salt free. You control the amount
- 1 cup shredded mozzarella cheese
- Kosher salt and black pepper
- 1 small onion diced - optional
- 1 small clove garlic minced - optional
Instructions
- Preheat the oven to 375℉Slice the chicken breasts in half lengthways, to make 4 thinner pieces. season both sides with the paprika, salt, pepper and the seasoning mix. Drizzle about one tablespoon of vegetable oil into the base of your casserole dish. place the chicken pieces around your dish and place the broccoli around the chicken.
- pour the soup mixture over the chicken and broccoli, cover with the shredded cheese. Cover with tinfoil and bake for 20 minutes. Remove the tinfoil and bake another 15-20 minutes to brown the top and finish cooking the chicken.
- Optional - for additional flavor I sauted a small diced onion and minced garlic for 2-3 minutes, just until they softened.
- I served mine over some leftover white rice from some take out we had the other night. Would also be great over some noodle or even mashed potatoes.
