I had some chicken boneless skinless chicken thighs in the fridge I wanted to use up or they were going to have to be placed in the freezer soon. I think chicken is the protein we eat the most and sometimes I have a hard time coming up with what to do with them. Technically that’s not accurate; I just don’t know if I want a soup, a sandwich, baked, fried etc. there is almost an endless possibility when it comes to chicken.

I wanted something I hadn’t made or at least a different way of making chicken this time around. My usual chicken taco is fried generally because the only time I make a chicken taco is when I am also making fish and shrimp tacos. It’s kind of a big ordeal and I didn’t want the big ordeal so here is a different; for me; take on chicken tacos and it was easier than fried, less mess and had great flavor so it was a win in my book.

Chicken Tacos - slow cooker
Equipment
- 1 slow cooker - crockpot
Ingredients
- 2 pounds boneless skinless chicken thighs
- 1 cup salsa your favorite
- ½ cup water
- 2 teaspoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon coriander
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
Instructions
- In your slow cooker add the chicken and cover with the rest of the ingredients. I gave mine a little stir so the chicken was covered with all the seasonings. Cook on low for the day or on high for 4 hours.
- Remove chicken or using 2 forks shred the chicken and then cook on low for another 30 minutes.
- You can use the shredded seasoned chicken any way you like, tacos, taco bowl, taco salad etc. Top with your favorite toppings.
