Buttermilk Waffles

Happy Father’s Day!
I love a good crisp exterior waffle with a nice soft interior. These waffles hit the bill.  I don’t make them often but when I do there are usually several people here. You may already have a plan of what you are making on this Father’s Day but if you don’t give these a try, I don’t think you will be disappointed. And the Dad in your home will probably love them!

If you didn’t plan on making anything with buttermilk, you don’t need to run out to the store either. You can make your own with regular milk and a little acid. I usually use a little vinegar or lemon. For every 1 cup of buttermilk needed you use 1 cup of milk stir in 1 tablespoon of acid and let it sit for 5-10 minutes, voila buttermilk!

I have tried ordering waffles out and I think there has only been 1 restaurant that I would and have ordered them again and again. It’s probably not a bad thing it’s about an hour and half away. Otherwise I would have them more often than I should. Now I am craving the chicken and waffles from Hot Suppa in Portland ME. I wonder if my husband is up for a road trip today?

Back to the buttermilk waffles – they were a huge hit and I can prove it since there wasn’t any left over. I also wanted to mention that I do try capture what I am making in pictures to share with you all but on occasion(s) I forget to take the after photo of the pictures just before serving. I think the smell and anticipation of eating what I made I tend to forget that I need to take a picture to share. So I took a picture of the first waffle and the last one just before I ate it.

When you make waffles or pancakes, do you do a tester first? I always do and my husband never does. I think my tester pancake is just testing the heat on the griddle. The waffle is testing how much of the batter to place on the waffle grate. either way I tend to be the eater of the tester. Perks of the home chef!

Buttermilk Waffles

A crispy exterior, soft interior waffle. easy to make, enjoy eating.

Ingredients
  

  • 1 stick unsalted butter melted/cooled or left on the counter till soft
  • 3 large eggs
  • cups buttermilk
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon sugar
  • ½ teaspoon salt

Instructions
 

  • Room temperature ingredients work best so take all your cold ingredients out about a half an hour before you want to begin or longer if you have the time. You can melt the butter and let it set aside while the other ingredients are warming up. 
  • In a large bowl place all your dry ingredients and whisk to blend. In another bowl whisk the eggs till frothy. Add the other wet ingredients to the eggs and beat into well combined.
  • Pour the wet ingredients into the dry ingredients and with a wooden spoon stir all ingredients together till combined. Batter should be a little lumpy and have air bubbles from the chemical reaction between the buttermilk and the leavening powder and soda. 
  • make sure your waffle iron is hot and if needed spray with non stick to help it a little. Enjoy!!!
