I started with wanting to make beef and broccoli and then I went to the garden. It’s been an OK year as I have eluded to in previous posts. Broccoli has always been a bumper crop, until this year. So my beef and broccoli turned into beef and vegetables, which was still very good and If needed to, I would add whatever vegetable I had on hand.
This is a simple dish and you probably have the sauce ingredients on hand. It comes together quickly and would be great for a weeknight meal served over some white rice.
This is the first year that we have been able to eat our cauliflower, I actually stopped trying years ago, but my husband picked out all of our plants this year. I was away and pretty stressed out knowing this. I should probably let some things go LOL.

Beef and Vegetables
Ingredients
- 1 Flank steak sliced very thin and bite sized pieces
- 2 tablespoon vegetable oil
- 1 small head broccoli bite size florets
- 3 medium carotts peeled and cut into match sticks
- 1 small head Cauliflower bite size florets
Sauce
- 1 teaspoon ginger freshly grated
- 3-4 cloves garlic freshly grated
- ½ cup hot water
- 6 tablespoons soy sauce low sodium or use Tamari
- 3 tablespoons brown sugar
- 1½ tablespoons corn starch
- ¼ teaspoon black pepper
- 2 tablespoons sesame oil
Instructions
- If serving over rice start cooking that now. You don't have to but sometimes freezing the steak for about 30 minutes helps with the slicing. I had no problem slicing the steak against the grain without freezing.
- In a small bowl add all the sauce ingredients together and stir to dissolve the brown sugar. Set aside.
- In a large skillet or wok add some oil and cook the veggies, I chose to cook mine individually since they all cook at different times. I also like my veggies a little on the al dente side versus totally soft. Stir fry to how you like them cooked and then set them aside. You may need to cover the pan to help cook some of your veggies.
- increase the pan to high heat and a little more oil and then add the sliced beef. In a single layer cooking for a couple of minutes per side till just cooked through. Lower the heat and add the sauce, bring to a simmer and let it thicken.
- Add the veggies and stir to combine. If your sauce becomes too thick add a little water a tablespoon at a time. Adjust seasonings to your liking and serve over white rice.
