I made this ice cream last week and it was stupid good! So much so I am making it again and then I should lose the recipe because we do not need more ice cream in our lives. So why am I documenting it here, so I won’t lose it. I just can’t make this weekly, we would be in big trouble with trying to get our clothes to fit LOL.

The recipe was very easy to make, yes we have an ice cream machine so that definitely helps. Technically you can make ice cream without a machine, you will need to whip the cream ahead of time before adding all the other ingredients.
Why did I even make this in the first place, it was for our World Wide Wednesday family dinner to Mississippi and without even looking what dessert they are known for, I thought Mississippi Mud Pie and then I found the ice cream and here we are coffee ice cream with 3 types of chocolate swirled into the mix.

Mississippi Mud Pie Ice Cream
Ingredients
- 2 large eggs
- ¾ cup sugar
- 2 cups heavy cream
- 1 cup whole milk
- 3 tablespoons instant coffee
- ½ cup coarsely chopped Oreo cookies
- ½ cup milk chocolate chips or chunks
- ¼ cup fudge sauce
- ¼ cup toasted chopped pecans
Instructions
- In a large mixing bowl, beat the eggs using an electric mixer until they are light and foamy, about 1 minute. Slowly add the sugar and continue mixing until light and airy.
- Add the cream, milk and coffee blending to combined.
- Pour the mixture into the ice cream maker and freeze according to the manufacturer's instructions.
- Once you have ice cream, transfer half of the mixture to a large freezer safe container. Add half of the Oreo crumbs, chocolate chips, fudge sauce, and pecans. Add the remainder of the ice cream and top with the rest of the cookies, chocolates and nuts. Cover and freeze for 4-6 hours.
