The garden is definitely winding down, yesterday the cucumbers, squash, eggplants, peppers and even the broccoli were all pulled out. The broccoli surprised me, it usually stays for longer than the other plants. We harvested the rest of the potatoes and some carrots and a few turnips.
There a few potatoes that we need to use up sooner rather than later, they either had some blemishes or got a nick during the harvesting. So for dinner I wanted to use a few of the potatoes and had some steaks that I wanted to cook up. We are steak and potato people so I have made this pairing too many times to count.
How to change it up a bit is always something I am interested in trying. This skillet steak and potato dish is a keeper. It was super easy and who doesn’t love butter, garlic and herbs on some roasted potatoes and seared steak.
Using up a few of the last squash we grew, so good!!!

Garlic Butter Steak and Potatoes
Equipment
- 1 skillet cast iron if you have one
Ingredients
- 2 steaks
- Kosher salt and black pepper to taste
- garlic powder to taste
- 1 tablespoon olive oil
- 2-3 medium potatoes peeled and cut into equal sized pieces. or use baby potatoes cut in half
- 4 tablespoons butter softened to mash with the garlic
- 2 teaspoon garlic minced
- 1 teaspoon dried Italian herb seasoning

- 1 teaspoon fresh thyme chopped
- 1 teaspoon fresh parsley chopped
Instructions
- preheat oven to 400℉In a small bowl combine the butter, garlic and dried seasonings and set asideSeason steaks generously with salt, pepper and garlic powder on both sides.
- place skillet over medium-high heat and drizzle with oil. Sear the steaks for 2-3 minutes per side or until they are nice and browned. Transfer to a plate and set aside.
- Add the potatoes to the skillet, season similar as the steaks, salt, pepper and garlic powder, saute for 3-5 minutes until browned. Push the potatoes to one side, add the steaks back into the skillet.
- Transfer skillet to the preheated oven and finish cooking for 10-15 minutes. This depends on the thickness of your steaks. The thicker they are the longer they will take.
- Remove from oven and place a dollop of the garlic butter onto each steak and the rest onto the potatoes. Stir the potatoes to coat and then top with the fresh herbs before serving.
