coleslaw – light and tasty

Procrastination is the word of the day or maybe the week might even be a month who knows at this point.

I sat down to write this morning, not sure what to say so I put away some dishes, finished loading the dishwasher and started it. Then I saw that the couch blanket needed folding and I should probably clean out the catch-all bin on my kitchen desk. Oooh there’s a couple of new catalogs I need to look at before getting rid of. See what I am doing here? Please explain it to me…

I have been trying harder, at least a little harder to watch what I am eating. I have told myself for YEARS to eat less move more, saying and doing are two totally separate things. I have definitely been doing to polar opposite, eating more and moving less and it shows. I asked for and got an Apple watch for Christmas hoping it would make me feel guilty enough to move; believe it or not it actually does. It tells me to stand up for a least a minute several times a day. It has walking, standing and exercising goals and encourages me to meet them. So far so good; at least the walking and standing one – baby steps. It’s actually a little scary. We had some nice days awhile ago so the dog and I went for a walk. My watch lit up and said “it looks like you are walking outside, want me to track it?” excuse me how does it know I am outside??? freaky right?

I forgot to take a plate picture before we all started to eat; this was what was left after we made and ate our plates.

Back to food – I am trying to be mindful with what I eat. With that being said there is no way I won’t eat what I want. I am old enough to know this fact. However I can control the portion sizes of things and try to make some things a little less calorie ridden. But I also know I will not eat something that does not taste good. With my other hang up; which I think is a positive one of not wasting food and using up what needs to be used before it goes bad. Last night there was a half bag of tri color slaw that needed to be used and I had picked up with last weeks groceries a garlic parmesan pork loin. Super simple dinner was on the menu.

I put the pork loin in the oven for 35 minutes. Took out the half bag of slaw. There were a couple of apples on the counter and pork goes so well with apples and I thought it would go great in the slaw for a little crunch. OK so now to make a dressing that wasn’t mayo based. My usual slaw has a full cup of mayo so that was out. Here is what I came up with, it had great flavor, enough zing from the vinegar, a little zip from the Dijon mustard and just enough sweet from the honey to round off everything.

Ingredients
  

  • 1 bag coleslaw mix
  • 1 medium Apple peeled and diced

dressing

  • 2 tablespoons grapeseed oil or use a neutral oil you have on hand
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 fresh lime juiced
  • Kosher salt and black pepper

Instructions
 

  • you can add all the dressing ingredients into a bowl and whisk them to incorporate everything or add them to a jar and shake it until they are all incorporated.
  • I used a little over half a bag of the prepared slaw for this amount of dressing and there was plenty. It is best to let the dressing soak into the slaw for at least 30 minutes.
