I love brownies but never make them. I fear or; more know for a fact I would eat them all day long. One of the hazards of working from home. So yesterday I decided I am going to make a batch and freeze them individually so I could have one and only one, not the the whole tray. The only down side that I see is I have to share them with my husband, oh and when they came out of the oven my son, daughter-in-law and granddaughter were there. Now I have to share with them. My son actually was about to cut them before I got to take a picture; I caught him just in time.
I found this recipe from mytxkitchen.com that I thought I would try. The brownies are not too sweet; which is nice, they were gooey which is a must. They did say to use a metal pan only, I don’t have a 9×9 metal pan so; running with scissors I used my 8×8 ceramic. I did have to cook them longer, I think that was due to the size more so than metal vs. ceramic. I would make them again, or rather I am going to have to make them again if I want some left over in the freezer.

If you bake, I am sure you have these ingredients on hand. Make a batch today, if you don’t eat them all; you too can have a little chocolate morsel snack throughout the week.

Easy Homemade Brownie
Equipment
- 1 9x9 baking dish metal preferred, glass or ceramic acceptable
Ingredients
- ½ cup unsalted butter melted and cooled
- 1 cup granulated sugar
- 1 teaspoon good vanilla extract
- 2 large eggs
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup all-purpose flour
- ½ cup cocoa powder
- 1½ cups chocolate chips
Instructions
- pre-heat oven to 350℉. Line a 9x9 baking dish with parchment paper. Melt the butter and set it aside until cooled.
- In a stand mixer or by hand, whisk together the butter, sugar and vanilla. Add the eggs and mix until incorporated.
- Add the dry ingredients to the wet and stir until combined. Fold in the chocolate chips.
- The batter is very thick, spread it all into your prepared baking dish and bake for 25-30 minutes. Let them cool for 30 minutes before slicing.

I hope you like them, be careful to not over cook them. I should have taken mine out a little sooner. Still good but I like them more gooey.
