This is my go-to coleslaw recipe and I have shared it in the past but I think there are so many more uses for it than just a side. Honestly until I started making pulled pork sandwiches the only time I would have coleslaw was if it came as a side of whatever I ordered. Usually fish and chips, which is still one of my favorites.
Since making coleslaw I will share a few ways that I use it. The first is pulled pork sandwiches, next is on taco’s. I don’t make it specifically for tacos, but if there is any leftover you tend to have to eat it in a day or two. It doesn’t last too long. So it is especially nice on a fish taco.
A maybe surprising use for you that you might not have tried yet is to make nachos and put your leftover BBQ pulled pork onto chips add some shredded cheese, bake this and once the cheese has melted and browned a bit, take it out of the oven and sprinkle some coleslaw onto, it makes for a lovely change of pace for nachos. Give it a try.
I have a couple of cabbages that we harvested out of the garden, so I will be slicing some of it up and making some of this yummy coleslaw. I think I will pick up a pork butt and put in the crockpot with some root beer and a few meals are already planned for the week. Earlier this morning my son, daughter-in-law and granddaughter were here for Sunday breakfast and Al and Michelle worked through their weeks worth of meals and grocery list while I picked up the kitchen. There’s sounded a little more diverse than ours sounds at the moment but things change around here so quickly who knows what we are actually going to have.

quick and easy coleslaw BBQ pulled pork
Equipment
- 1 slow cooker
Ingredients
Pulled Pork
- 1 3/4 pound boneless pork butt trim
- 1 large bottle rootbeer cover the pork in the slow cooker
Coleslaw
- 1 bag tri-colored coleslaw
- 1 cup mayonnaise
- ¼ cup Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 lemon juiced
- pinch of sugar
- ½ teaspoon celery seed
- a few dashes hot sauce
- Kosher salt and black pepper
Instructions
Pulled Pork
- Place Pork in a slow cooker, cover with the Root Beer; cook on low all day, mine is on 9 hours while I am at work. When you get home, dump the liquid, put the pork back in the slow cooker and you should be able to take 2 forks and shred all of it. Add a container of your favorite BBQ sauce, I use Sweet Baby Rays. Turn the slow cooker on high for 15-20 minutes and serve. You can add more sauce as needed.
Coleslaw
- Combine all the above ingredients; add to the coleslaw and let set for 10-15 minutes until it melds.
- Create your delicious sandwich, get some nice hearty rolls and add a scoop of pork and a scoop of slaw. You are going to need a few napkins
